dc.description.abstract Sweet cherry is widely used in a variety of areas such as fruit juice industry, table consumption, cake and jam production. Local and worldwide known sweet cherry cultivars are used for both table consumption and processed products. The composition of sweet cherry cultivars is important for processing and also storage of the fruits. Carotenoid compositions, sugar content, organic acid profile of the cherry cultivars are critical to nutritional value of the products. In this study, the carotenoid compositions, organic acid profiles and sugar content of local sweet cherry cultivars that grown in Sakarya, were determined and compared. The characteristics of some local sweet cherry cultivars like Hasan Kazak were revealed for the first time.
