Benzoik asit ve sorbik asit gıdalarda yaygın olarak kullanılan koruyucu maddelerdir. Farklı gıdalardaki kullanım miktarları ulusal ve uluslar arası yasal kuruluşlar tarafından düzenlenir. Ancak bu maddelerin kullanımlarının yasak olduğu bazı gıdalarda üretim kusurlarını gidermek için kullanıldığından şüphelenilmektedir.Bu araştırmanın amacı; salça, meyve suyu, hazır çorba, cips, çikolata ve yoğurt gibi katkısız gıdalara katılan sorbik asit ve benzoik asit miktar ve varlığının HPLC (High Performance Liquid Chromatography) ile belirlenmesi ve Türk Gıda Kodeksi Renklendiriciler ve Tatlandırıcılar Dışındaki Gıda Katkı Maddeleri Tebliği'ne göre uygunluğunun araştırılmasıdır. Farklı firmalara ait 20 adet domates salçası, 3 adet biber salçası, 23 adet meyve suyu, 21 adet yoğurt, 11 adet cips, 20 adet çikolata ve 11 adet toz çorba analiz edilmiştir.Sorbik asit miktarı salçada 0,00-526,40 mg/kg ve yoğurtta 0,00-137,67 mg/kg arasında bulunmuştur. Cips, meyve suyunda, çikolatada ve toz çorbada sorbik aside rastlanmamıştır. Benzoik asit miktarı salçada 0,00-1933,56 mg/kg; meyve suyunda 0,00-197,67 mg/kg; yoğurtta 0,00-174,22 mg/kg; çikolatada 0,00-91,97 mg/kg; toz çorbada 0,00-66,40 mg/kg arasında bulunmuştur. Cipslerde benzoik asit bulunamamıştır.
Benzoic acid and sorbic acid are extensively used preservatives in foods. Their legal using limits in different food products are regulated by national and international regulatory agencies. However, using of these substances forbidden in some foods is suspected to used to fix some flaws in the production of these foods.The aim of this research was to determine the presence and amount of sorbic acid and benzoic acid added for preservation in some unadulterated food (tomato paste, fruit juice, ready-soups, chips, chocolate and yoghurt) by using HPLC (High Pressure Liquid Chromatography) and explored the suitability Turkish Food Codex Colors and Sweeteners Other Than Food Additives Notification. In this study, 20 different brands of tomato paste, 3 different brands pepper sauce , 23 different brands of fruit juice, 21 different brands of yoghurt, 20 different brands of chocolate, 11 different brands of chips and 11 different brands of powder soup were analyzed. No sorbic acid or benzoic acid were found in any of the chips samples.The amount of sorbic acid was found in tomato paste and pepper sauce samples in the range of 0,00-526,40 mg/kg; in yoghurt samples in the range of 0,00-137,67 mg/kg. Sorbic acid wasn?t found in any of the chips, fruit juice, powder soup or chocolate samples.
